Healthy Granola Tarts.
You can make these little guys on a Sunday for the week ahead and they will save you some precious sleep time in the morning. Wheat free, sugar-free, full of good fats and nutrients – this is one of the best ways to start your busy day.
Healthy Granola Tarts
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
2 tbsp desiccated coconut
Handful of nuts (any nuts will work)
2 tbsp of Dr.Coy’s Stevia Erylite
3 tbsp of Dr.Coy’s Coconut Oil (melted)
Preheat the oven to 180°C
Grease a muffin tin with coconut oil.
Blend together all the ingredients except the coconut oil in a blender until a crumbly mixture forms. Add the melted coconut oil and pulse again for a few seconds. Place the mixture into the muffin tins pressing it tightly to form a well in the middle. You should get 6-8 crusts out of this mix. Bake for 8-10 minutes. Remove from the oven and let them cool completely before removing the tarts from the tin. If you don’t wait they may fall apart.
Store in an airtight container for up to a week and fill them with your favourite yogurt just before consuming. We love adding some homemade berry compote, chia jam, nutbutter or fresh berries. Enjoy!
