These delicious Coconut and Mint Chocolate bites are a winner here at Dr. Coys!
Easy to make, our Mint Chocolate has always been very popular, so this creamy coconut filling dipped in our nutritional mint chocolate makes for a lovely healthy after dinner treat or even a snack.
What you need:
You will need a 20x20cm (8,5×8,5in) tin lined with parchment paper. When we make these for guests, we use cookie cutters to create nice shapes but when making for ourselves, we just slice the mixture into cubes.
1 1/2 cans of full fat coconut milk (solid part only)
4 tbsp creamed coconut
1/3 cup Dr.Coy’s Coconut Oil
1/4 cup unsweetened shredded coconut
3-4 tbsp Dr.Coy’s Stevia Erylite 3ars Dr.Coy’s Mint Chocolate 1 tbsp Dr.Coy’s Coconut Oil
What to do:
Place the coconut milk, creamed coconut, coconut oil and Stevia in a saucepan and melt everything together on low heat, then stir in the shredded coconut. Let it cool, then pour the mixture into the prepared tin. Place in the freezer for at least an hour. In the meantime melt the mint chocolate in a bain marie or a microwave, stirring in the coconut oil. Take the coconut filling out of the freezer and let warm up for about 10 mins, so it will be easier to cut. Use a cookie cutter to cut desired shapes or just slice into cubes. Dip the shapes into the melted chocolate and place them on the parchment paper. Any leftover melted chocolate can be drizzled over the bites.
You can use any other flavour chocolate here if you don’t like the mint.
Store in the freezer and take out 5-10 min before serving.
